Apple, Brie & Pistachio Salad
Ingredients
- Salad
- 1 Granny Smith Apple, diced
- 3/4 c. crumbled gorgonzola
- 3/4 c. salted pistachios, shelled
- 8 large Romaine leaves, washed, dried and torn
- chopped red onion to taste
- -----
- Dressing:
- 1/4 c. olive oil
- 1/4 c. champagne vinegar
- 1T finely chopped mint
- 1 t. salt
- 1 T honey
- 1 t. fresh orange peel
- 1/4 cup canned or fresh cranberry sauce
Directions
Tear the lettuce leaves and mix together with apple, cheese, and nuts in a large bowl. In a jar or small bowl, whisk together the dressing ingredients. Pour over salad and toss.
