Refreshing spring salad - the perfect lunch or brunch main dish. Serve a larger portion of chicken if serving as a dinner entree.
Chicken Salad with Nectarines in Mint Vinaigrette
Ingredients
- Dressing:
- 1 c chopped mint leaves
- 1/3 c sugar
- 1/4 c white wine vinegar
- 1 t fresh lemon juice
- pinch of salt
- pinch of black pepper
- --------
- Salad:
- 2 c chopped cooked chicken breast
- 1 c seeded cucumber
- 1/3 c chopped pecans
- 2 T minced red onion
- 3 nectarines, peeled, pitted and chopped
- 6 red leaf lettuce leaves
- Blue cheese to taste
Directions
Dressing:
Mix chopped mint, sugar, vinegar, juice, salt and pepper.
Salad:
Combine chicken cucumber, pecans, onions, nectarines and blue cheese and toss with dressing.
Top each lettuce leaf with 1/6th of the mixture.
