Citrus Grilled Snapper with Roasted Pineapple

Citrus Grilled Snapper with Roasted Pineapple

Ingredients

  • 1 - 3lb red snapper filet
  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup soy sauce
  • 2 T grated ginger
  • 2 lemons
  • 1 lime
  • 2 - 3 chopped green onions
  • grated orange rind
  • 1 pineapple - cored and cut into rings

Directions

Heat a charcoal or gas grill for indirect cooking.

Make several shallow slashes in the body of the snapper using a very sharp knife - this will keep the fish from curling + let's the seasoning penetrate the fish

Place the fish on a piece of tin foil - large enough to make a package or in a shallow disposable roasting pan

Combine soy sauce, orange juice and ginger, then drizzle over fish.  Turn fish over and drizzle remaining soy sauce mixture.

Slice lime and 1 lemon into rounds and place over fish.

Cut other lemon in half and place in package or pan to roast.

Cover fish with foil to make a package or cover disposable pan with foil.

Grill over indirect heat covered for 10 - 15 minutes or until fish is opaque and flaky.

Squeeze roasted lemons over fish before serving.

Cook pineapple rings directly on grill (indirect heat side) for about a minute on each side until there are char marks but the pineapple is still firm.

Remove and serve along side the fish.
