Always a hit - yummy garlic mashed potatoes.
Garlic Mashed Potatoes
Ingredients
- 1 lb potatoes, yukon gold, peeled black pepper, freshly ground
- 10 cloves garlic, small
- 4 tbsp butter, melted
- 1/2 cup milk, warmed
- black pepper, freshly ground
Directions
Start by toasting the garlic cloves, skins left on, in a skillet over very low heat. Shake frequently and toast until the cloves are browning and are starting to soften. This will take just a few seconds. Remove from heat and allow the garlic to rest and continue softening for another 15 minutes. At this point you will want to peel the cloves for use in the mashed potatoes
Quarter the potatoes and put into a sauce pan and cover with water. Bring the water with the potatoes to a boil, then reduce heat and simmer until the potatoes are soft, about 10 minutes. Drain the potatoes, then add the garlic and mash the potatoes. If you want a more smooth consistency you can run the potatoes and garlic through a ricer. Next add the butter and stir or mash into the potatoes. Finish by combining in the milk and freshly ground pepper to taste.
