Irish Soda Bread

Ingredients

  • 4.5 cups flour
  • 4 t baking powder
  • .5 t baking soda
  • 1 t salt
  • 3 T sugar
  • 1 T caraway seeds
  • 1 c raisins
  • 2 c buttermilk

Directions

  1. Preheat the oven to 350 degrees and grease a 9-inch bread pan and dust it with flour. In a large bowl, mix 4 cups of flour with the baking powder, baking soda, salt, sugar, and seeds.
  2. Add the buttermilk to the bowl and mix with a fork until the mixture forms a dough.
  3. Sprinkle flour on a board. Turn out the dough and knead for about 5 minutes, working in the flour from the board and forming the dough into a smooth round loaf about 8 inches in diameter.
  4. Press the dough evenly into the pan and cut an "x" about 1/2 inch deep across the top.
  5. Bake for 1 and a quarter hours or until the loaf sounds hollow when tapped on the bottom.
  6. Move the loaf onto a wire rack and brush the top with butter.
  7. Let it cool before slicing.
