Yummy fresh berries and ginger granola create a sweet treat that's good for you.
Mixed Berry Granola Cobbler
Ingredients
- 2 cups ginger granola
- 1/2 cup 1% low-fat milk
- 2 to 3 cups mixed berries
- 1/4 cup firmly packed brown sugar
- 2 teaspoons cornstarch
- ground cinnamon to taste
- pinch of orange zest
- (optional to taste) ground nutmeg
- (optional) candied ginger pieces
- Vegetable cooking spray
- Plain fat-free yogurt
Directions
- Preheat oven to 350º or heat a grill or campfire. Stir together granola and milk in a small bowl. Let stand 5 minutes.
- Toss together berries and next 5 ingredients in a large bowl. Spoon berry mixture into a 8-inch square baking dish.
- Stir granola mixture, and spoon over berry mixture. Lightly coat with cooking spray.
- Bake at 350º for 1 hour or until bubbly. Serve with yogurt topped with candied ginger pieces.
