Sauteed Bell Peppers and Onion for Fajitas

Ingredients

  • 3-4 bell peppers, a variety of colors
  • 2 onions
  • vegetable oil

Directions

Cut the onions in half and then chop into 1/4 inch slices, making sure that the onion rings come out into half rounds. Also cut the bell peppers into strips, as though making vegetable sticks out of them.

Heat a 1-2 tbsp of oil in a skillet. Add the peppers and onions once hot and sauté gently until the onions are starting to brown and the bell peppers are cooked. You can add a dash of water and cover to allow the peppers and onions to steam for a bit before finishing sautéing if you want them to be well done. When the peppers and onions are soft and nice and hot mix with the chicken fajitas and serve.
