Sauteed Green Beans with Shallots

Ingredients

  • 1 lb fresh green beans, de-stemmed
  • 1 to 1 1/2 cups shallots, thinly sliced
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp dry white wine

Directions

Start by blanching the beans. Drop the beans in boiling water for 3 to 4 minutes, drain and then plunge the beans into ice water. Heat the butter in a large skillet, when the butter is warm add the sliced shallots and cook until they are golden brown and beginning to get crispy on the edges. Next add the green beans to the mixture and saute the green beans with the shallots, stirring frequently until warm. Add the white wine and bring the mixture to a simmer. Season with salt and pepper to taste. Serve immediately.
