Filled with lots of fresh vegetables and bean this is a hearty crab soup perfect anytime of year.
Crab Soup Recipe
Ingredients
- 28 oz can whole tomatoes, cut into pieces
- 3 cups water
- 2 cups chicken broth
- 1/2 cup frozen lima beans
- 1 cup baby carrots, sliced
- 1/2 cup frozen corn
- 1/4 cup onion, chopped
- 2 cups red potatoes, cut into cubes
- 1 garlic clove, minced
- 2 celery stalks, chopped 1 lb crabmeat
- 2 tbsp Old Bay seasoning
- 1 bay leaf
- 1 lb crabmeat
Directions
In a large sauce pan saute the onions and celery in olive oil for about 3 minutes or until softened. Add minced garlic and saute for 2 more minutes. Add the Old Bay seasoning, and mix thoroughly. Add all remaining ingredients except the crab meat. Bring the mixture to a boil, then reduce heat to low and simmer over medium-low heat until potato cubs are soft, approximately 45 minutes. Stir in the crabmeat and simmer for another 10 minutes and serve immediately.
