Grilled Nectarines with Gorgonzola and Peppered Bacon
Ingredients
- 2 ripe nectarines 3 Sprigs Fresh Rosemary 2 T gorgonzola cheese (or more to taste) 2 strips of thick cut peppered bacon Arugula Olive oil Balsamic Vinager non-stick foil
- 3 Sprigs Fresh Rosemary
- 2 T gorgonzola cheese (or more to taste)
- 2 strips of thick cut peppered bacon or prosciutto
- Arugula
- Olive oil
- Balsamic Vinegar
- non-stick foil
Directions
- Heat charcoal or electric grill
- Core and cut nectarines into thin slices
- Toss nectarines with olive oil and 1 sprig of fresh rosemary - finely chopped
- Cook peppered bacon until crisp - set aside
- Place non-stick foil over grates
- Grill nectarines until the begin to caramelize
- Sprinkle with Gorgonzola and remove from grill as soon as the cheese begins to melt
- Toss Arugula with olive oil and a splash of balsamic vinegar
- Place nectarines on arugula, sprinkle with peppered bacon and garnish with rosemary sprigs
- Serve and enjoy!
