New Orleans Shrimp Po Boys

Ingredients

  • Fried Shrimp
  • 1 lb medium Fresh Gulf coast or Pink Key West shrimp- shelled and de-veined
  • 1 bottle Abita Beer Amber (or other craft brewed Amber)
  • dash or two of Tabasco
  • 1 1/2 cups flour
  • a pinch of cayenne (to taste)
  • black pepper to taste
  • Oil in a deep fryer according to manufactures directions

  • Po Boy:
  • French Bread
  • Butter
  • Remoulade (see recipe)
  • Hot Sauce (preferably Tabasco)
  • For a "dressed" po boy you need lettuce, tomato slices and sliced pickles (optional)

Directions

Fried Shrimp
    1.    Marinate shrimp in Beer and Tabasco
    2.    Thoroughly mix flour and cayenne and black pepper - make this as spicy as you like
    3.    Dredge shrimp in flour mixture and immediately deep fry until golden and cooked through
    4.    Drain on paper towel


Po Boy Assembly
    1.    Melt the butter
    2.    Toast the bread in an oven or on a griddle
    3.    brush inside of top and bottom piece of bread with melted butter
    4.    slather on some remoulade to taste
    5.    add the fried shrimp
    6.    dress if desired
    7.    add a dash or hot sauce if you like
    8.    put the top on
    9.    enjoy
 
Additional Tips
When I'm feeling homesick I put on some Dr John's, grab a Barq's and make a po boy - it's the next best thing to being in New Orleans.
