Steckerlfisch - Fish on a stick recipe
Ingredients
- 2 salmon filets - cut into strips
- 1 small zucchini
- 5-6 shallots
- 8 - 12 cherry tomatoes
- 2-4 sprigs of fresh rosemary
- 1 lemon
- olive oil
- sea salt & black pepper
- 5-6 slices of Italian or French country ham
- skewers (if using wood skewers remember to soak in water prior to grilling)
Directions
- Marinate salmon strips in olive oil, black pepper, lemon and rosemary leaves.
- Wrap salmon in prosciutto
- Thread salmon on sticks with zucchini, shallots and cherry tomatoes
- Season with salt and pepper
- Grill over an very hot open fire crisp the prosciutto, but don't overcook the fish
