Steckerlfisch - Fish on a stick recipe

Ingredients

  • 2 salmon filets - cut into strips
  • 1 small zucchini
  • 5-6 shallots
  • 8 - 12 cherry tomatoes
  • 2-4 sprigs of fresh rosemary
  • 1 lemon
  • olive oil
  • sea salt & black pepper
  • 5-6 slices of Italian or French country ham
  • skewers (if using wood skewers remember to soak in water prior to grilling)

Directions

  1. Marinate salmon strips in olive oil, black pepper, lemon and rosemary leaves.
  2. Wrap salmon in prosciutto
  3. Thread salmon on sticks with zucchini, shallots and cherry tomatoes
  4. Season with salt and pepper
  5. Grill over an very hot open fire crisp the prosciutto, but don't overcook the fish
