Strawberry Rhubarb Crisp

Ingredients

  • 8 cups Rhubarb, sliced into 1 inch thick slices
  • 1 pint Strawberries, washed and quartered
  • 1/2 cup flour
  • 1 cup sugar
  • 1/2 cup Brown sugar
  • 1/2 cup Flour
  • 1/2 cup Butter
  • 1 tsp cinnamon

Directions

strawberry-rhubarb-crsipGrease a 9X13 inch baking pan and preheat the oven to 350 degrees. Slice the rhubarb and clean and slice the strawberries. Mix the rhubarb and strawberries in a large bowl, add 1/2 cup flour and 1 cup sugar and mix well. Leave the rhubarb in the bowl. Next make the topping, you can place the remaining ingredients in a food processor and process until the mixture is the consistency of bread crumbs. Stir the rhubarb again and pour the mixture in the pan. Sprinkle with the topping and bake for an hour.
