Simple lightly sweet yeast cake topped with brown sugar.
Dutch Kaffee Kuchen
Ingredients
- 1 egg
- 1/2 cup butter
- 1 cup sugar
- 1 yeast cake
- 2 cups milk
- 7 cups flour
- Melted butter
- Brown sugar
Directions
Start by bringing the milk almost to a boil, which is called scalding. During this process you have to stir the milk continuously making sure that a layer of skin from forming on the surface, and keeping it from sticking to the bottom. Dissolve the yeast and measure out the flour, add the yeast. Cream the sugar, butter and egg yolk, setting aside the egg white. Alternating add milk and flour mixture. Beat the mixture and separately beat the egg white, add the egg white to the dough. Set the dough aside and allow it to rise for 2 to 3 hours.
Flour a bread board or other hard work surface. Place large spoonfuls of dough on the bread board and roll them out flat. Grease pie pans and place the rolled out dough in the pie pans. Set aside and allow to rise for another 1 1/2 hours. Melt some butter and brush over the top of the dough once risen. Finish by sprinkling, or crumbing with brown sugar. Bake in 350 degree or medium hot oven for about 30 minutes.
