Simple fired goodness. Add jalapenos for a southwest spicy twist.
Corn Fritters
Ingredients
- 1 cup corn kernels, you can use frozen or canned if you have no fresh corn
- 1 egg
- 1/2 tsp flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp butter
- 1 tbsp milk
- Dash Pepper
- Oil for frying
Directions
Start by mixing the dry ingredients in a bowl, flour, baking powder, salt and pepper. Beat the egg and melt the butter. Combine the milk, egg and melted butter with the corn. Mix the dry ingredients into the corn mixture.
Heat oil, about 1 cup, in a large skillet or frying pan. The oil should reach about 360 degrees. Carefully drop spoonfuls of batter into the oil and deep fry until they are golden brown. You will need to turn them over once. Be careful not to spatter oil in this process as it can burn you badly.
Remove the fritters from the oil once done and place on a plate covered with paper towels. Allow to drain and pat dry before serving.
