Pumpkin Bread Recipe
Ingredients
- 2 to 2 1/2 cups flour
- 15 oz pumpkin puree, unsweetened
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 cup sugar
- 1 cup brown sugar, packed salt
- 1/2 cup butter, softened and cut into pieces
- 3 oz cream cheese, cut into pieces
- 4 large eggs
- 1/4 cup buttermilk
- salt
Directions
Preheat your oven to 350 degrees, then grease and flour 2 loaf pans. Combine the flour, baking soda and powder in a bowl. In a large saucepan, combine the pumpkin, cinnamon, nutmeg, cloves and a dash of salt over medium heat. Cook this mixture until it is reduced, you will need 1 1/2 cups of the mixture for the bread. Remove from heat and stir in the butter, cream cheese and sugars. Make sure the pumpkin mixture is well combined, especially that the butter and cream cheese have melted and mixed in thoroughly.
Next whisk the buttermilk and eggs together before combining with the pumpkin mixture. Then combine the pumpkin with the flour by gently folding together until combined. Divide the batter between the two pans. Bake at 350 for 45 to 50 minutes. Allow the bread to cook before removing from the pans. Serve warm.
