Crab Stuffed Portabella Mushrooms with Blue Cheese on a Miami Onion Roll

Ingredients

  • 3 oz cooked cracked crab or cooked canned crab
  • 1 oz blue cheese
  • 1 tablespoon fat free sour cream
  • 1 teaspoon shredded cheddar cheese
  • 1 large portabella mushroom
  • 1 teaspoon dijion mustard
  • 1 Miami onion roll

Directions

  1. Combine crab, blue cheese, sour cream, shredded cheddar cheese
  2. Stuff portabella
  3. Cook mushroom for 10 - 15 minutes over med heat
  4. Spread dijion mustard on 1/2 of onion roll
  5. Place stuffed portabella on top of mustard
  6. Top with other 1/2 of roll
  7. Wrap in foil and grill
