fried-chickenFried chicken is the quintessential down south comfort food.  Making homemade fried chicken is a treat for family and friends.

This recipe calls for frying the chicken and then finishing it in the oven.  If you are cooking on a campfire or a grill you can palce the chicken on a wire rack and then cover with foil and cook on the grill or over the fire.  You could also heat a dutch oven and finsh the chicken in the dutch oven.

Southern Fried Chicken

Ingredients

  • 3.5 lbs chicken or 1 whole chicken, skin-on
  • 2 1/2 cups flour
  • 1 1/2 cups buttermilk
  • Salt and pepper
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cayenne pepper
  • 2 tsp paprika
  • 1 1/4 tsp garlic powder
  • 2 cups vegetable oil

Directions

Start by combining 1 1/4 cups buttermilk, salt, pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, and half of the cayenne in a large bowl. Put the chicken in the buttermilk mixture and coat thoroughly. Cover and allow the chicken to sit, refrigerated, in the buttermilk for at least 2 hours and even overnight.

After the chicken has soaked for the desired period of time, preheat the oven to 400 degrees. Combine the flour, baking powder, baking soda, remaining garlic powder, paprika, cayenne pepper, as well as salt and pepper in a large bowl. Add the last of the buttermilk, 1/4 cup to the flour mixture and combine until it starts to clump together.

Next take each chicken piece and thoroughly coat in the flour mixture. Making sure to press hard to make sure that the flour coating sticks well to create a thick coating. Set aside and heat oil in a large pan over medium heat until it reaches 375 degrees. Place the chicken pieces in the hot oil and cook until one side is golden brown, about 4 minutes, then turn and cook on the second side for about 3 minutes, until golden brown also. Finish by baking the chicken on a wire rack set in a rimmed baking sheet and bake the chicken for about 15 minutes or until the chicken pieces reach 175 degrees.
