Peach Cobbler

Ingredients

  • 2 1/2 lbs fresh ripe peaches, peeled and sliced
  • 1/4 cup sugar
  • 1 tbsp flour
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • salt
  • ----topping----
  • 1 cup flour
  • 3 tbsp brown sugar
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 5 tbsp cold butter, cut into 1/4 inch pieces
  • 2/3 cup plain yogurt
  • 1 tbsp brown sugar

Directions

Preheat the oven to 425 degrees. Start by peeling and slicing the peaches. Combine the sliced peaches and sugar together in a large bowl and allow to sit for half an hour, tossing a few times. Add the cinnamon, vanilla, lemon juice and salt and toss again. Grease an 8-inch baking dish and add peaches. Bake for about 10 minutes, until the peaches are just starting to bubble.

Next make the topping while the peaches are baking. Combine the flour, sugar, baking powder, baking soda and salt. Cut in the cold butter, using a pastry cutter or food processor, until the butter is in small pieces, like course crumbs. Add the yogurt and combine until the dough is formed, but do not overmix since this will make the topping tough.

When the peaches are done baking, remove from the oven and place rounded spoonfuls of the topping over the peaches to create a nice topping. Sprinkle the remaining brown sugar over the top and place the cobbler back in the oven. Cook for another 20 minutes until the topping is golden brown and the fruit is bubbling.
