fish-tacos

Perfect in their simplicity.  Serve with warm corn (or flour) tortillas with a squeeze of lime or dress them up with mango salsa, guacamole, marinated cabbage, pico de gallo or all of the above.

Grilled Fish Tacos

Ingredients

  • 1 lb boned and skinned cod or other white
  • 8 corn tortillas
  • salt and pepper
  • lime wedges

Directions

Start by rinsing the fish and then patting it dry. The best way to cook the fish is to use a charcoal grill, but you can also use a gas grill, or even pan fry the fish. If you are using a grill, place the fish on a hot grill, then close the lid and cook for about 12 minutes in total, less if the fish is thin. Make sure to turn the fish just once. Season with salt and pepper, and serve warm with lime wedges.

Warm the tortillas before serving. Place a piece of fish on each tortilla and garnish with the salsa of your preference. You can use the Mango or Papaya salsa below, or the Marinated Cabbage, traditional Pico de Gallo is also delicious, and of course fresh guacamole and sour cream are also fantastic.
